Mint lemonade is the perfect beverage to serve on a hot summer day! It is very simple to make and you only need a few ingredients:
I used mint leaves freshly picked from our garden, but you can buy a bunch of mint from the grocery store if you don’t have your own. (You can also leave the mint out and make plain lemonade if you prefer.)
Note: the easiest way to be sure you are adding the right amount of water is to weigh or measure the four cups of water, fill two ice cube trays and freeze them, and chill the remaining water. If you have an ice maker in your fridge, add 32 regular size ice cubes and then add additional water to taste at the end.
Also, you can save time by using bottled lemon juice but fresh squeezed works perfectly too. If you do use bottled juice, be sure it is preservative-free like this one from Costco. I love this brand, it tastes fabulous, and it is a lot less expensive than squeezing your own!
Start by making mint simple syrup. Combine the two cups of water, sugar, salt, and mint leaves in a small saucepan.
Stir over medium heat until the sugar is fully dissolved. Then, bring the mixture to a boil while stirring occasionally. Remove the pan from the heat and let stand for ten minutes.
Add the lemon juice to a large pitcher that is big enough to hold ten cups:
Strain the mint simple syrup into the pitcher:
Add the ice and chilled water and stir until the ice is dissolved:
Add additional water to taste if the lemonade is too strong. (Keep in mind that serving the lemonade over ice will also dilute it somewhat.)
Your lemonade is ready to serve!

- 480 g (2 c) Lemon Juice
- 400 g (2 c) Vegan Sugar
- 0.8 g (1/8 tsp) Salt
- 20 Fresh Mint Leaves
