These caramelized onions are super delicious and one of my very favorite holiday recipes! There are only six ingredients (including the salt and pepper), but the flavor they create is wonderfully complex and deep. Here is what you need to make them:
This is the red currant jelly that I used this year. I have used other brands, but I have never tried a different kind of jelly in this recipe.
Defrost the onions on your counter, then add them to a glass bowl and cover the bowl with plastic wrap. Microwave on high power for three minutes, then set aside while you prepare the glaze.
Melt the vegan butter over medium heat, then add the jelly, sugar, salt, and pepper:
Stir until all the jelly is melted:
Add the onions and stir to coat them with the glaze:
Cook over medium-high heat, stirring occasionally, until the glaze reduces. This will take about 15 minutes:
Continue to cook, now stirring very often, until the onions are a lovely golden brown. This will take another five to ten minutes:
Turn off the heat, then stir until all the glaze is off the pan and coating the onions:
Serve and enjoy!

- 100 g (5 TBS) Red Currant Jelly
- 42 g (3 TBS) Vegan Butter
- 8.0 g (2 tsp) Vegan Sugar
- 3.2 g (1/2 tsp) Salt
- 0.3 g (1/8 tsp) Black Pepper
